What is “Dashi”?
Dashi is a soup stock made by boiling kelp and dried bonito, and is used to add Umami to dishes.
Umami is one of the basic tastes as like acidity, sweetness, saltiness, and bitterness, and was scientifically proven by Japanese scholars in the 20th century.
In addition to kelp and dried bonito, dried sardines, shiitake mushrooms, vegetables, and some fish have traditionally been used for soup stock for Japanese cuisine.
Dashi is indispensable not only for miso soup, but also for Oden, hot pot, simmered dishes, and udon soup.

This time, we are going to explain how to take the classic bonito & kelp dashi
◆bonito & kelp dashi(serves 4 cup)◆
Ingredients
・Kelp 10g
・Dried bonito 20g
・Water 5cup
Directions
①Soak the kelp in water and leave it for at least 30 minutes.
②Heat on medium heat, remove the kelp just before boiling, and turn off the heat when it boils.
③Add dried bonito flakes and leave for about 2 minutes.
④Strain the soup stock.

出汁とは
出汁とは昆布や鰹節などを煮出した汁のことで、料理にうま味を加えるために使われます。
うま味は酸味、甘味、塩味、苦味と並ぶ基本的な味覚の一つで、20世紀に日本の学者によって科学的に立証されました。
日本料理では、昆布や鰹節の他に、煮干し、椎茸、野菜、魚などが伝統的に出汁に使われてきました。
味噌汁はもちろん、おでんや鍋、煮物、うどんのつゆにも出汁は必要不可欠です。
出汁をとってみよう!
今回は定番の鰹昆布出汁の取り方を説明します。
◆鰹昆布出汁(4カップ分)◆
材料
・昆布 10g
・鰹削り節 20g
・水 5カップ
行程
①水に昆布を浸け、30分以上置く。
②中火で加熱し、沸騰直前に昆布を取り出し、沸騰したら火を止める。
③鰹節を加えて約2分置く。
④出汁を濾す。(鰹節を取り除くため)
