As you know, the staple food in Japan is rice.
It is called “kome” before cooking, and “gohan” after cooking.
About Rice
Kome is the seed of a plant called Ine.
Inasaku (Rice cultivation) was introduced from China to Japan during the Jomon period.
There are 2 types of rice which are glutinous rice(Mochi gome) and non-glutinous rice(Uruchi mai).
The rice we usually eat is non-glutinous rice.
Glutinous rice is more sticky, so it’s often used for rice cakes(mochi), red rice(sekihan), and sweets.
Rice is processed in various ways other than just eat as it is.
When mixed with tea, it becomes brown rice tea, when kneaded and baked, it becomes rice crackers(senbei), and when crushed and steamed, it becomes sweet dumplings(dango).
For example, sake, rice vinegar, amazake(→YouTube)are also made from rice, and rice is also used to breed the jiuqu.
There are also rice flour bread and rice ice cream.
How to cook rice
For the last, we’re going to introduce how to cook rice using a pot.
I think many people use a rice cooker to cook rice, but you can cook rice without it.
First, measure the rice.
When measuring rice, the unit “go” is used in Japanese, but if you know the amount, you can measure using a cup without any problem.
Next, wash the rice. Rinse quickly with plenty of water 4-5 times.
After washing, add the same amount of water as rice and let it soak for 30 minutes to 1 hour.
Then heat the pot of rice and water.
Heat on medium heat until just before it spills, reduce the heat and wait for another 10 minutes.
After turning off the heat, steam for 10 minutes without opening the lid.
Finally, roughly stir the whole and it’s done

日本の主食といえばご飯ですが、炊く前のものは米といいます。
米について
米は稲という植物の種です。
稲作は縄文時代に中国から日本へ伝わりました。
米にはうるち米ともち米があります。
普段よく食べるご飯はうるち米です。
もち米はうるち米より粘り気が強く、餅や赤飯、お菓子などに使われることが多いです。
米はご飯や餅の他にも、様々な方法で加工されます。
お茶と混ぜれば玄米茶になるし、練って焼けば煎餅に、砕いて蒸せば団子になります。
日本酒、米酢、甘酒(→YouTube)なども米から作られますし、それらに使われる麹を繁殖させるためにも米が使われます。
米粉のパンや米のアイスクリームなんてものもあります。
ご飯の炊き方
では、最後にご飯の炊き方を紹介します。
ご飯を炊くのに炊飯器を使う人は多いと思いますが、炊飯器がなくてもご飯は炊けます。
今回は鍋を使ってご飯を炊いてみましょう。
まず米を測ります。
米を測る時には「合」という単位を用いることが多いですが、量がわかれば「カップ一杯」という測り方でも問題ありません。
次に米を研ぎます。たっぷりの水で4~5回ささっと洗ってください。
研いだ後は米と同量の水を入れ、30分〜1時間ほど浸けておきます。
そして米と水が入った鍋を火にかけます。
吹きこぼれる直前まで中火で加熱し、火を弱めてさらに10分加熱します。
火を止めたら、蓋を開けずに10分蒸らします。
最後にしゃもじなどでざっくり全体をかき混ぜて完成です。
